Join Eileen in her beautiful casa and kitchen and discover wonderful recipes for Thai, Indian, Middle Eastern, and Mexican dishes. She has been cooking professionally for more than 50 years and founded the catering firm Pease Porridge Hot and the Annapolis School of Cooking. Her years of experience in teaching and love of cooking make the classes fun as well as instructional.
Each class, which begins at 11 am and lasts about 2 ½ hours and is “hands on”, as students learn to prepare dishes from Eileen’s international repertoire. Students work together creating the meal and then adjourn to the breezy front terrace of the casa to enjoy a luscious luncheon.

It’s that time of year! I am researching and testing recipes for next season as well as traveling to Spain and Portugal, planning to include some tastes and flavors from that part of the world. I begin classes in mid-December and will inaugurate the season with something a little different:
Pub Food, a catch-all for some fun and different twists on ordinary menu choices. So, Crispy Baked Zucchini/Parmesan Sticks, Individual Potato Gratins, Chunky Portabello Veggie Burgers and, best for last, Raspberry Cardamom Tart.
Remember that I will do private classes for 6-8 people and you can choose from any of the classes that have been held up to that point. For instance, you could arrange a class to do the Pub Food menu, which you may missed because you weren’t here, in January with a group of your friends.
